pastry free berry calzones
For a fruity treat use Mountain Bread in place of pizza pastry to make these zesty raspberry and blueberry triangles. A fresh and summery dessert option.
Prep Time: 10 minutes
Cook time: 40 minutes
INGREDIENTS
1 tsp vanilla essence
200 gm creamed cheese, softened
1 lemon, juice and zest
200 gm frozen mixed berries, thawed and well drained (Fresh when available)
½ cup sugar
1 tsp cinnamon powder
3 sheets of Mountain Bread™,cut into halves
2 cups vegetable oil
DIRECTIONS
In a bowl combine vanilla, creamed cheese,lemon juice and zest and ½ of the sugar until smooth. Fold in the berries carefully.
Place a desert spoonful of the mixture onto the end of the Mountain Bread™, brush the edges with a little water and fold from point to point to make a triangle. Mix the remaining sugar with the cinnamon.
Heat the oil until hot in a saucepan. Add the triangles and cook for 2 minutes or till golden brown. Remove and drain on paper towel to remove excess oil (can be shallow fried if you prefer).
Toss through the sugar and cinnamon mix. Serve 3 per person with either some fresh berries or vanilla bean ice-cream.
