BBQ Chicken Rolls With Avocado
These BBQ chicken-avocado rolls are the perfect way to use up weekend leftovers for a tasty lunch or dinner.
2 cups chicken (preferably from a BBQ chicken) or use our easy poached chicken recipe
3 tablespoons mayonnaise
2 cups spinach leaves, rinsed & dry
2 tomatoes sliced thinly (you can remove pulp & seeds to avoid a soggy wrap)
1 ripe avocado sliced into 12
4 thin slices red onion
Favourite BBQ sauce
Prep time: 10 minutes (prepare the chicken ahead of time if poaching your own)
Cooking time: 10 minutes
If using Go No Gluten Wraps, brush with a little water and heat in sandwich press until soft and pliable (about 7 secs). Go Low Carb Wraps don’t need heating first as they will be soft enough to wrap cold.
Spread each tortilla with a little mayonnaise and cover half the surface area with spinach, tomato, avocado, onion and chicken. Fill and roll each Go No Gluten Wrap while still warm and pliable. Squeeze BBQ sauce to flavour.
Wrap tortilla & secure with a toothpick, or roll with bakers’ paper & pack as a tasty lunch, snack or picnic!
